2Tbsp Olive Oil
10 Stalks Celery, sliced
1 Onion, chopped
2 cloves garlic
2Tbsp flour
2 Cups Chicken Broth
1-2 Cups Water
1 Bay leaf
½ Cup Milk
Salt & Pepper



1. Heat up olive oil in a pot, then sauté your sliced celery. Then add your onion and your garlic; should take around 8-10 minutes for items to become tender
2. Add the flour and mix with ingredients, then gradually add the chicken broth and bay leaf; cover and simmer for 30 minutes
3. Either use an immersion blender to puree the soup or simply transfer the soup to a blender by batches
4. Lastly, add milk and then salt and pepper to taste. Serve
